Pre heat oven to 350
Fry up one package of bacon (cut into 1/2 inch peices) drain on a paper towel and set aside
Prepare one box elbow or other macaroni pasta according to box directions for al dente (about 7 minutes boiling time) drain.
For bechamel sauce:1/2 stick butter melted, 4 tbsp flour, 4 c milk, 2 cups shredded cheese (gruyere, cheddar, whatever you like), a pinch of nutmeg\, pinch of freshly ground pepper.
melt the butter and mix in the flour to create the roux. heat through for about a minute or two then add milk, add a pinch of nutmeg stir constantly with wisk. when it starts to thicken add shredded cheese and stir to combine.
In casserole dish combine the pasta, bacon and the sauce. add bread crumbs for topping and dot with butter. bake at 350 for about 20-25 minutes or until brown and bubbly.
Remove from oven, and dig in!
